It's about celebrating the magnificent ingredients that we use and the specialised food technologies that we implement to bring you such unique products. We believe that food is culture. We think Riberry is potentially one of the most underutilised Native Australian foods (and that's saying something because we don't use enough of any of our wonderful botanicals). The Riberry tree is in the same family as cloves and cinnamon and it shows. The fruit has a musky, moderately sweet flavour with distinct aromatic notes of the afore mentioned spices. Its tart and tangy finish leaves a refreshing, perfumed, cleansing sensation on the pallet. If that sounds like a good base to a mixer to you, you would be correct. In this shrub we've lent into those spice notes, fortifying with them with unique native and more familiar spices.
