What we love doing most at Lynch's Pantry is taking traditional, familiar foods and putting a native Australian botanical spin on them. This marmalade is a great example where the familiar citrusy bite comes with the unique flavour of Australian Finger Lime and the complex tart and tangy Quandong with its upfront sweet and sour burst of apricot and rhubarb notes followed by a and subtle earthy finish with a hint of aniseed. The result is exactly what we hoped for, a hundred mile an hour head on collision between familiarity and intrigue.
