Illawarra Plum Jam

Illawarra Plums are a native Australian fruit endemic to the East Coast of New South Wales and Queensland.  They have vivid dark fruit to which this jam owes its stunning deep purple hue.  The fruit are mild and grape-like with a subtly sweet flavour and interesting resinous or piney  notes which are intensified by cooking.  Illawarra Plum is famous for a its health benefits, it's antioxidant levels are seven times that of blueberries and it has a high content of sticky sugars which are extremely beneficial to the gastrointestinal tract.
