Roasted Desert Oak Wattleseed

Desert Oak Wattleseed (Acacia coriacea) is native to Australian arid and semi-arid regions. When roasted and ground the seed is prized for savoury applications imparting a rich, distinctly umami-forward flavour profile and notes of roasted pork, coffee and peanut butter.  It works magnificently combined with herbs as a savoury rub for lamb, beef and game, a perfect seasoning for roasted vegetables and an intriguing addition to dukkah mixtures.
