It's long been a trick in the mixologists tool bag to balance sourness using the refreshing nature of mint. Its a dangerous game though given the potent nature of mint runs the risk of drowning your other flavours and turning your creations into something resembling a mouth wash. Enter Australian Native River Mint with its peppery spearmint flavour is familiar but more delicate to the exotic mints we are used to. At any rate, its not likely to overpower the sour flavour powerhouse that is Davidson Plum. The sour, citrusy, herby and sweet elements in this shrub make it an outstanding mixer for apéritifs but also a wonderfully refreshing non-alcoholic cordial.
