Bush Tomato

Solanum Centrale or Bush Tomato is a small shrub native to Australian arid and semi-arid regions and bearing a small fruit around the size of a grape or pea.  The fruit is wild harvested after sun drying on the bush an turning a deep ochre, reddish-brown like a raisin.  The flavour profile is bold and concentrated with intense sun-dried tomato and tamarillo notes combined with more subtle carob/caramel sweetness and a spicy/pungent aftertaste.  It works on just about everything but is particularly suited to sauces, soups, chutneys and salsas or as a rub or seasoning for red meat and game.
